Chicken biriani is the Eid morning dish of Zanzibar — prepared the night before, the sealed pot is placed over coals early on Eid morning, and by the time prayers are done, the biriani is ready. The fragrance that escapes when the seal is broken is one of the most anticipated moments of the Tanzanian Islamic calendar.

Ingredients

Equipment: Large dum pot, Foil or dough, Heat diffuser

  • 1.2 kg chicken — pieces marinated overnight in 1 cup yogurt, 4 garlic cloves, 1 tbsp ginger, 2 tsp garam masala, 1 tsp turmeric, 2 tsp paprika, 2 tsp salt
  • 4 cups basmati rice — parboiled to 70%
  • 2 onions — fried golden
  • ½ tsp saffron — soaked in warm milk
  • 3 tbsp ghee
  • ¼ cup fried cashews
  • ¼ cup raisins
  • Foil or dough for sealing

Method

  1. Cook marinated chicken in ghee until 80% done — 30—35 minutes.
  2. Parboil rice to 70% with whole spices. Drain.
  3. Layer: chicken, half rice, onions, cashews, raisins, remaining rice, saffron milk, ghee.
  4. Seal tightly with foil.
  5. Dum cook over very low heat with diffuser for 25—30 minutes.
  6. Break seal at the table for maximum theatre.
