Kidney stew is prepared similarly to liver in Tanzania — soaked first to remove bitterness, then cooked quickly in a spiced sauce. The lemon juice at the end is the essential brightening note that makes it enjoyable even for those unfamiliar with organ meats.

Ingredients

Equipment: Wide frying pan

  • 500g beef kidney — cleaned and chopped
  • 2 onions
  • 3 tomatoes
  • 3 garlic cloves
  • 1 tbsp ginger
  • 2 tbsp oil
  • 1 tsp curry powder
  • 1 tsp paprika
  • 2 tsp salt
  • 1 tbsp lemon juice
  • ¼ cup coriander

Method

  1. Remove fat and core from kidney. Slice into 2cm pieces.
  2. Soak in cold salted water with lemon juice for 20 minutes. Drain.
  3. Blanch in boiling water 3 minutes. Drain and rinse.
  4. Cook onions until golden. Add garlic, ginger, spices.
  5. Add tomatoes. Cook 5 minutes.
  6. Add kidney pieces. Cook 8—10 minutes — no longer.
  7. Add lemon juice and coriander. Serve.
