🍚 Tanzanian Chicken Pilau

Tanzanian Chicken Pilau — fragrant spiced rice cooked with bone-in chicken pieces and Zanzibar spices. The more accessible celebration pilau — full Zanzibar spice character, deeply satisfying, and perfect for family celebrations and special occasions.
Chicken pilau is the celebration rice dish that more families can afford than goat or beef pilau — but it carries all the fragrance, warmth, and joy of the full Zanzibar spice experience. It is served at birthdays, graduation celebrations, and family gatherings across Tanzania.
Ingredients
Equipment: Large sufuria, Spice grinder
- 1 kg chicken — bone-in pieces
- 3 cups basmati rice — soaked
- 2 large onions — sliced
- 4 tomatoes — diced
- 4 garlic cloves
- 1 tbsp ginger
- 3 tbsp oil
- 6 cups chicken stock
- 2 tsp salt
- ¼ cup coriander
Zanzibar Spices
- 2 tsp cumin seeds
- 8 cardamom pods
- 2 cinnamon sticks
- 8 cloves
- 1 tsp peppercorns
- 2 star anise
Method
- Toast spices. Grind half. Keep half whole.
- Brown chicken. Remove.
- Cook onions until golden. Add garlic, ginger, both spices, tomatoes. Cook 8 minutes.
- Return chicken. Add stock. Simmer covered 30 minutes until tender.
- Remove chicken pieces. Add drained rice to broth.
- Boil. Cover. Lowest heat 18 minutes.
- Place chicken back on rice for last 5 minutes.
- Rest 10 minutes. Garnish with coriander.
Chef Tips
- Bone-in chicken gives the most flavour to the broth and rice.
- Measure the broth after chicken cooking — adjust for the rice.
- Placing chicken back on rice perfumes it from above.
Common Mistakes to Avoid
- Boneless chicken — loses broth flavour.
- Incorrect broth ratio.
