Ingredients
Equipment: Very large pot
- 400g beef — cubed
- 400g goat — cubed
- 400g chicken pieces
- 3 onions — diced
- 5 tomatoes — diced
- 5 garlic cloves
- 2 tbsp ginger
- 4 tbsp oil
- 2 tsp curry powder
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- 3 tsp salt
- 3 cups water
- ½ cup coriander
Method
- Brown beef and goat together first — they take longer. Remove.
- Brown chicken separately. Remove.
- Cook onions until very golden.
- Add garlic, ginger, all spices, tomatoes. Cook 10 minutes.
- Return beef and goat. Add water. Simmer 40 minutes.
- Add chicken. Simmer 25 more minutes.
- All meats should be falling-tender. Adjust seasoning.

- Add chicken later — it cooks faster than beef and goat.
- A very large pot is essential — this is a feast preparation.
- Season generously at the end.

- Adding chicken too early — it overcooks.

The Science
Different meats have different collagen content and cooking times. Goat and beef (higher collagen) need 60—75 total minutes; chicken (lower collagen, smaller muscle fibres) needs only 25—30 minutes. Staggered addition ensures all are perfectly cooked simultaneously.
