Ingredients
Equipment: Wide pan with lid
- 1 kg chicken pieces
- 400ml thick coconut cream
- 2 onions — diced
- 4 garlic cloves
- 1 tbsp ginger
- 3 cardamom pods — bruised
- 1 tbsp vegetable oil
- 1 tsp turmeric
- 1 tsp salt
- ¼ cup fresh coriander
- 1 tbsp lemon juice
Method
- Brown chicken pieces. Remove.
- Cook onions until golden. Add garlic, ginger, cardamom, and turmeric.
- Return chicken.
- Pour in coconut cream.
- Simmer very gently (never boil) for 30—35 minutes until chicken is cooked and sauce is thick.
- Add lemon juice and coriander. Serve.
