Tamarind and fish is one of the great Swahili coast flavour combinations — the tartness of tamarind perfectly counterpoints Indian Ocean fish. Found at every coastal food stall.

Ingredients

Equipment: Wide pan

  • 800g fish fillets — snapper or kingfish

Marinade

  • 3 tbsp tamarind paste
  • 3 garlic cloves
  • 1 tsp turmeric
  • 1 tsp cumin
  • 2 tsp salt

Sauce

  • 2 onions — sliced
  • 2 tomatoes — diced
  • 2 tbsp tamarind paste
  • 1 tsp sugar
  • 2 tbsp oil
  • ½ cup water
  • ¼ cup coriander

Method

  1. Marinate fish in tamarind, garlic, turmeric, cumin, salt for 30 minutes.
  2. Sear fish 3—4 minutes per side until golden. Remove.
  3. Cook onions in same pan until golden.
  4. Add tomatoes, tamarind, sugar. Cook 5 minutes.
  5. Add water. Return fish. Simmer gently 5—8 minutes.
  6. Garnish with coriander.
