Ingredients
Equipment: Wide pan with lid
- 700g firm fish fillets
- 2 onions — diced
- 3 tomatoes — diced
- 4 garlic cloves
- 1 tbsp ginger
- 200ml coconut milk
- 2 tbsp tamarind paste
- 2 tbsp oil
- 1 tsp curry powder
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp sugar
- 2 tsp salt
- ¼ cup coriander
Method
- Season fish with salt and turmeric.
- Cook onions until golden. Add garlic, ginger, spices.
- Add tomatoes. Cook 8 minutes.
- Add coconut milk and tamarind. Stir to combine.
- Bring to gentle simmer. Add fish. Cover and simmer gently 10—12 minutes.
- Adjust sweet-sour balance with sugar. Garnish with coriander.
