🦀 Tanzanian Crab Curry
Mchuzi wa Kaa
Tanzanian Mchuzi wa Kaa — fresh Zanzibar crabs in a rich coconut milk and tamarind curry. The most communal seafood dish of the coast — messy, fun, and extraordinarily flavourful.
Crab curry is the most communal seafood dish of the Tanzanian coast — eaten with hands, shells cracked at the table, sauce mopped with chapati. The mess is half the point.
Ingredients
Equipment: Very large pot
- 4 fresh whole crabs (500g each) — cleaned and quartered
- 2 onions — diced
- 4 tomatoes — diced
- 5 garlic cloves
- 2 tbsp ginger
- 300ml coconut milk
- 2 tbsp tamarind paste
- 3 tbsp oil
- 2 tsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp chilli powder
- 2 tsp salt
- ¼ cup coriander
Method
- Clean and quarter crabs. Crack claws.
- Cook onions until golden. Add garlic, ginger, spices.
- Add tomatoes. Cook 8 minutes.
- Add crab pieces. Stir to coat.
- Add coconut milk and tamarind. Simmer covered 20—25 minutes.
- Crab is ready when bright red throughout.

- Crack claws before cooking.
- Crab turns bright red when cooked.
- Provide finger bowls.
Common Mistakes to Avoid
- Uncrushed claws.
- Undercooked crab — grey not red.
The Science
Crab shell contains astaxanthin bound to protein — heat denatures the protein, releasing astaxanthin which turns the shell bright red. This colour change is the cooking indicator.
