Tanzanian Kaa wa Nazi — fresh Zanzibar crab simmered in thick coconut cream with cardamom, garlic, and coriander. The most luxurious and delicate crab preparation — coconut cream treats the crab with a gentleness that curry cannot.
Coconut cream crab is the most refined crab dish of Zanzibar — where the curry version is bold and communal, this is delicate and elegant. The thick coconut cream barely seasoned, the crab floating in its fragrant bath, cardamom the only significant spice.
Ingredients
Equipment: Large pot
- 2 large fresh crabs — cleaned and quartered
- 400ml thick coconut cream
- 3 garlic cloves — minced
- 3 cardamom pods — bruised
- 1 tbsp butter
- 1 tsp salt
- ¼ cup fresh coriander
- 1 tbsp lemon juice
Method
- Heat butter. Cook garlic and cardamom 1 minute.
- Add crab pieces. Coat in the butter.
- Pour in coconut cream. Bring to a very gentle simmer.
- Cover and cook gently 20—25 minutes until crab is bright red throughout.
- Add lemon juice and coriander.
- Serve with the cream sauce.

- Very gentle simmer — coconut cream splits if boiled.
- Cardamom is the only spice needed.
- The coconut cream sauce is as good as the crab — serve with bread.
