Ingredients

Equipment: Food processor or knife, Deep frying pan

  • 500g white fish fillets — finely minced
  • 1 small onion — finely minced
  • 3 garlic cloves — minced
  • 1 tbsp ginger
  • 2 tbsp fresh coriander
  • 1 green chilli — minced
  • 1 egg
  • 3 tbsp all-purpose flour
  • 1 tsp curry powder
  • 1 tsp cumin
  • 1 tsp salt
  • Oil for deep frying

Tamarind dipping: 3 tbsp tamarind paste + 1 tbsp sugar + 2 tbsp water

    Method

    1. Mix minced fish with onion, garlic, ginger, coriander, chilli, egg, flour, and spices.
    2. Form into golf ball-sized spheres.
    3. Refrigerate 15 minutes — helps them hold shape.
    4. Heat oil to 175°C.
    5. Fry in batches 4—5 minutes until golden all over.
    6. Make dipping sauce: simmer tamarind, sugar, and water 2 minutes.
    7. Serve immediately with tamarind sauce and pili pili.
