Tanzanian Calamari — fresh calamari rings in a spiced flour and semolina batter, deep-fried until golden and crispy in 2—3 minutes. Served with pili pili mayo and lemon. The most popular seafood starter at Tanzanian coastal restaurants.
Fresh calamari from the Indian Ocean, battered and fried in 3 minutes. The semolina in the batter gives a far crunchier coating than plain flour alone.
Ingredients
Equipment: Deep frying pan
- 500g fresh calamari — cleaned and sliced into rings
- ½ cup all-purpose flour
- ¼ cup fine semolina
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper
- Oil for deep frying
- Pili pili mayo (4 tbsp mayo + 1 tbsp pili pili sauce)
- Lemon wedges
Method
- Pat calamari rings completely dry.
- Mix flour, semolina, and all spices.
- Toss calamari in seasoned flour. Shake off excess.
- Heat oil to 180°C.
- Fry in small batches 2—3 minutes until golden.
- Serve immediately with pili pili mayo and lemon.
