🦑 Tanzanian Grilled Squid

Tanzanian Grilled Squid — whole squid scored and marinated in lemon, garlic, and Zanzibar spices, grilled over charcoal in 6—8 minutes. The beach restaurant favourite — simple, fast, and magnificent when the squid is this fresh.
Grilled squid is the Zanzibar beach restaurant starter everyone orders — whole squid, marinated briefly, grilled quickly over high charcoal. When fresh from the morning's catch and coals at peak, it needs only lemon and pili pili.
Ingredients
Equipment: Charcoal grill or griddle pan, Knife for scoring
- 600g whole fresh squid — cleaned, tentacles separated
- 3 garlic cloves — minced
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp salt
- Pili pili sauce and lemon wedges to serve
Method
- Score squid tubes in a crosshatch pattern — cuts about 5mm deep.
- Combine marinade. Coat squid. Marinate 30 minutes.
- Grill over very high heat for 3—4 minutes per side.
- The squid curls and chars slightly — this is correct.
- Serve immediately with pili pili and lemon.

- High heat is essential.
- Scoring allows even cooking and decorative curl.
- Fresh squid is sweet; frozen is rubbery — enormous difference.

- Low heat — rubbery steamed squid.

The Science
Scored squid tubes curl towards the scored side when hit with high heat — scored muscle fibres contract faster, creating the characteristic curl. Increases surface area for Maillard browning.
