🐟 Tanzanian Grilled Kingfish

Tanzanian Grilled Kingfish — thick kingfish steaks marinated in lemon, garlic, and spices, grilled over charcoal until lightly charred and moist. Kingfish is the Indian Ocean's finest grilling fish — firm, flavourful, and magnificent over charcoal.
Kingfish (Spanish mackerel) is the most prized grilling fish of the Tanzanian coast — its firm, oily flesh holds together perfectly over charcoal and develops a magnificent char without drying out.
Ingredients
Equipment: Charcoal grill, Spatula
- 4 kingfish steaks (200g each)
- 4 garlic cloves — minced
- 3 tbsp lemon juice
- 2 tbsp oil
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- 2 tsp salt
Method
- Mix marinade. Coat kingfish steaks thoroughly. Marinate 30 minutes.
- Grill over medium-high coals for 6—8 minutes per side.
- Do not move until fish releases from grill cleanly.
- Garnish with coriander. Serve with lemon.

- Kingfish steaks are thicker — adjust time.
- Oily flesh is more forgiving.
