🐟 Tanzanian Whole Fried Fish
Samaki Mzima wa Kukaanga
Tanzanian Samaki Mzima wa Kukaanga — whole tilapia or snapper scored and seasoned with Tanzanian spices, deep-fried until the skin is magnificently crispy and golden. Tanzania's most universally eaten fried fish — found at every roadside stall and mama lishe counter.
Whole fried fish is the most ubiquitous fish preparation across Tanzania — from Lake Victoria's shores to Zanzibar's beaches, from Dar es Salaam's streets to Kilimanjaro's markets. The whole fish, fried until completely crispy, served with ugali and kachumbari, is a complete and deeply satisfying Tanzanian meal.
Ingredients
Equipment: Deep frying pan large enough for whole fish, Slotted spatula
- 2 whole tilapia or small snapper (400g each) — scaled and gutted
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp cumin
- ½ tsp garlic powder
- 2 tsp salt
- ½ tsp black pepper
- 3 tbsp all-purpose flour or rice flour
- Oil for deep frying
- Lemon, kachumbari, and pili pili to serve
Method
- Score fish 4—5 times on each side to the bone.
- Mix all spices with flour. Rub all over fish and into the scores.
- Rest 10 minutes — flour absorbs surface moisture.
- Heat oil to 175°C — enough to cover the fish.
- Carefully lower fish into hot oil.
- Fry without moving for 6—7 minutes.
- Flip carefully. Fry 6—7 minutes on the other side.
- Skin should be golden, crispy, and lift cleanly.
- Rest 2 minutes. Serve immediately.

- Enough oil to cover fish is essential.
- Do not move fish during frying — skin crisps by sustained contact.
- Rest after frying — carryover heat finishes the centre.

The Science
Scoring allows the seasoned flour to adhere to flesh beneath the skin — when fried, the flour creates a crispy crust directly on the flesh as well as on the skin, producing a more extensively crunchy result.
