Dagaa wa Kukaanga
Tanzanian Dagaa wa Kukaanga — small fresh or dried sardines fried until completely crispy and golden, seasoned with lemon, chilli, and salt. Tanzania's most affordable, nutritious protein — eaten daily by millions around Lake Victoria.
Dagaa (lake sardines) are among the most important protein sources in Tanzania — affordable enough for everyone, nutritious, and when properly fried until completely crispy, deeply delicious. The bones become edible and provide significant calcium.
Ingredients
Equipment: Deep frying pan, Slotted spoon
- 400g fresh small sardines or dried dagaa
- 2 tbsp flour or rice flour
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp salt
- ½ tsp chilli powder
- Oil for frying
- Lemon wedges and pili pili to serve
Method
- Pat fish completely dry.
- Mix flour, turmeric, paprika, salt, chilli. Toss fish in seasoned flour.
- Heat oil to 180°C.
- Fry in batches 3—4 minutes until deeply golden and completely crispy.
- Serve with lemon and pili pili.
