Tanzanian Mchuzi wa Dagaa — dried dagaa (lake sardines) cooked in a spiced tomato-onion sauce. The most affordable, nutritious protein stew of Lake Victoria — eaten with ugali by millions of Tanzanians daily.
Dagaa stew is the everyday protein of Tanzania's lake regions — dried lake sardines in a simple tomato sauce, reconstituted into a nutritious stew. The meal most Tanzanian families around Lake Victoria eat every day.
Ingredients
Equipment: Medium pot
- 200g dried dagaa — rinsed and picked over
- 2 onions — diced
- 3 tomatoes — diced
- 3 garlic cloves
- 1 tbsp ginger
- 2 tbsp oil
- 1 tsp curry powder
- 1 tsp turmeric
- 2 tsp salt
- ½ cup water
- ¼ cup coriander
Method
- Rinse dagaa thoroughly in cold water. Pick out any debris.
- Cook onions until golden. Add garlic, ginger, spices.
- Add tomatoes. Cook 6 minutes.
- Add dagaa and water.
- Simmer covered 12—15 minutes until dagaa are soft and well flavoured.
- Garnish with coriander.
Chef Tips
- Rinse dagaa thoroughly — can be sandy.
- Do not over-stir — dagaa break apart.
- Stew should be thick, not watery.
