🥬 Tanzanian Spinach Curry
Mchicha wa Curry
Tanzanian Mchicha wa Curry — spinach or amaranth leaves sautéed in a fragrant onion, tomato, and spice base with cumin, turmeric, and coconut milk. The Indian Ocean-influenced spiced spinach preparation — more aromatic and deeply flavoured than plain sautéed greens.
The spiced spinach curry reflects Tanzania's Indian Ocean trading heritage — the same spice tradition that perfumes the pilau and the biriani is applied to the everyday spinach, creating a vegetable dish of unusual depth and fragrance.
Ingredients
Equipment: Wide pan
- 500g fresh spinach or mchicha — washed and roughly chopped
- 2 onions — diced
- 3 tomatoes — diced
- 4 garlic cloves — minced
- 1 tbsp ginger
- 200ml coconut milk
- 2 tbsp oil
- 1 tsp curry powder
- 1 tsp cumin
- 1 tsp turmeric
- ½ tsp garam masala
- 1 tsp salt
Method
- Heat oil. Cook onions until golden.
- Add garlic, ginger, and all spices. Stir 1 minute.
- Add tomatoes. Cook 6 minutes until thick.
- Add spinach in batches. Stir until wilted.
- Pour in coconut milk. Simmer gently 6—8 minutes.
- Season. Serve.
Chef Tips
- Add spinach in batches — the first batch must wilt before the next goes in.
- Coconut milk makes this richer than plain sautéed spinach.
- Do not boil the coconut milk hard.
Common Mistakes to Avoid
- Adding all spinach at once — too much volume to stir.
- Boiling coconut milk.
The Science
Spinach contains oxalic acid which inhibits calcium absorption. The vitamin C in the tomatoes simultaneously increases iron absorption — the two effects partially balance each other, resulting in a dish with better overall mineral bioavailability than spinach alone.
