Tanzanian Mchuzi wa Bilinganya — eggplant cooked in a fragrant tomato-onion curry with Zanzibar spices. The eggplant absorbs all the surrounding flavours, becoming extraordinarily rich and satisfying. A Tanzanian vegetarian main that satisfies completely.
Eggplant curry is one of Tanzania's most satisfying vegetarian dishes — the eggplant's sponge-like quality absorbs the spiced tomato sauce completely, becoming meltingly tender and deeply flavoured. The Indian Ocean spice influence makes this far more aromatic than plain cooked eggplant.
Ingredients
Equipment: Wide pan with lid
- 500g eggplant (aubergine) — cubed
- 2 onions — diced
- 3 tomatoes — diced
- 4 garlic cloves — minced
- 1 tbsp ginger
- 3 tbsp oil
- 1 tsp curry powder
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp paprika
- ½ tsp chilli powder
- 2 tsp salt
- ½ cup water
- ¼ cup coriander
Method
- Salt eggplant cubes. Rest 15 minutes. Rinse and pat dry.
- Heat oil over medium-high. Sauté eggplant until lightly golden on all sides — 5 minutes. Remove.
- Cook onions until golden in the same pan.
- Add garlic, ginger, and all spices. Stir 1 minute.
- Add tomatoes. Cook 6 minutes until thick.
- Return eggplant. Add water. Cover.
- Simmer 12—15 minutes until completely tender.
- Garnish with coriander.

- Pre-frying the eggplant seals the surface — preventing it from becoming completely mushy.
- Eggplant absorbs oil rapidly — use a medium-high heat so it fries rather than soaks.
