Butter beans (large white beans) in coconut milk is a Zanzibar coastal favourite — the large beans become almost melting-creamy when properly cooked, and their mild flavour absorbs the coconut-spice sauce completely.

Ingredients

Equipment: Large pot

  • 300g dried butter beans — soaked overnight
  • 400ml coconut milk
  • 2 onions — diced
  • 3 tomatoes — diced
  • 4 garlic cloves
  • 1 tbsp ginger
  • 2 tbsp oil
  • 1 tsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 2 tsp salt
  • ¼ cup coriander

Method

  1. Cook soaked butter beans in fresh water 60—70 minutes until very tender and creamy. Reserve liquid.
  2. Heat oil. Cook onions until golden.
  3. Add garlic, ginger, spices. Stir 1 minute.
  4. Add tomatoes. Cook 6 minutes.
  5. Add butter beans and ½ cup reserved liquid.
  6. Simmer 15 minutes.
  7. Add coconut milk. Simmer gently 10 minutes.
  8. Garnish with coriander.

  • Butter beans must be cooked until extremely tender — almost falling apart.
  • Their large size means they take longer than kidney beans.
  • Some will naturally break down into the sauce — this is correct.
