Ingredients
Equipment: Large wide pan with lid
- 800g firm fish — snapper, kingfish, or barracuda
- 400ml thick coconut milk
- 2 large onions — diced
- 4 tomatoes — diced
- 5 garlic cloves — minced
- 1 tbsp ginger
- 2 tbsp tamarind paste
- 3 tbsp oil
- 1 tsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- ½ tsp ground cardamom
- ¼ tsp ground cloves
- 1 tsp paprika
- 1—2 green chillies
- 2 tsp salt
- ¼ cup fresh coriander
Method
- Season fish with salt and turmeric.
- Heat oil. Cook onions slowly until deeply golden — 12 minutes.
- Add garlic, ginger, chillies, and all ground spices. Stir 1—2 minutes.
- Add tomatoes and tamarind. Cook 10 minutes until completely thick and dark.
- Pour in coconut milk. Bring to a gentle simmer.
- Add fish. Spoon sauce generously over each piece.
- Cover and simmer gently 10—14 minutes.
- Garnish with coriander.
Chef Tips
- The deeply golden onions and completely reduced tomato-tamarind base are non-negotiable — this is where all the depth comes from.
- Cardamom and cloves are the Zanzibar signature — do not omit.
- Never boil after adding coconut milk.
