Swahili Chicken and Rice — chicken slow-cooked in a fragrant Zanzibar spice sauce, its rich broth used to cook basmati rice to golden perfection, the chicken placed back on top for the final steam. A simpler version of chicken pilau — all the flavour, half the work.
Swahili chicken and rice is the everyday version of chicken pilau — same flavours, same technique, less effort. It is the mid-week celebration dish for coastal Tanzanian families.
Ingredients
Equipment: Large sufuria with lid
- 1 kg chicken — bone-in pieces
- 3 cups basmati rice — soaked
- 2 onions — diced
- 4 tomatoes — diced
- 4 garlic cloves
- 1 tbsp ginger
- 3 tbsp oil
- 6 cups water or stock
- 2 tsp salt
- ¼ cup coriander
Spices: 2 tsp cumin, 1 tsp coriander, 1 tsp turmeric, ½ tsp cardamom, ¼ tsp cloves
Method
- Brown chicken. Remove.
- Cook onions golden. Add garlic, ginger, spices, tomatoes. Cook 8 minutes.
- Return chicken. Add water. Simmer covered 35—40 minutes until very tender.
- Remove chicken. Measure broth — need 5 cups. Add rice.
- Boil, then cover, lowest heat 20 minutes.
- Place chicken atop rice. Rest 10 minutes.
- Garnish with coriander.
