🥚 Swahili Egg Curry

Swahili Egg Curry — hard-boiled eggs halved and simmered in a rich Zanzibar spice and coconut milk sauce. The coastal egg preparation that makes the most of eggs — simple protein elevated by the full coastal flavour palette.
Egg curry on the Swahili coast uses the same coconut-spice sauce base as fish and meat curries — but the egg absorbs the curry beautifully, producing a deeply flavoured result from the simplest and most affordable protein.
Ingredients
Equipment: Wide pan
- 8 hard-boiled eggs — halved
- 400ml coconut milk
- 2 onions — diced
- 3 tomatoes — diced
- 4 garlic cloves
- 1 tbsp ginger
- 3 tbsp oil
- 1 tsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- ½ tsp cardamom
- 2 tsp salt
- ¼ cup coriander
Method
- Cook onions until golden. Add garlic, ginger, and all spices.
- Add tomatoes. Cook 6—8 minutes until thick.
- Add coconut milk. Bring to gentle simmer.
- Add egg halves cut-side down. Spoon sauce over.
- Simmer gently 8—10 minutes.
- Garnish with coriander.
Chef Tips
- Score the egg whites lightly before adding — allows sauce to penetrate.
- Cut-side down into the sauce first — absorbs better.
Common Mistakes to Avoid
- Not scoring the eggs.
- Boiling coconut milk.
The Science
Hard-boiled egg white is a dense protein matrix. Scoring the surface creates channels that allow the sauce to penetrate into the egg. The scored surface also provides more area for the Maillard reaction with the sauce, creating flavour bonding.
