Swahili Beef Ribs — beef ribs marinated in Zanzibar spices and tamarind, slow-simmered until very tender, then finished over charcoal for a magnificently caramelised exterior. Two-stage cooking: the simmer for tenderness, the grill for glory.
Swahili beef ribs use the two-stage technique — slow simmer first for complete tenderness, then the charcoal grill for the caramelised, spiced exterior. The result is ribs of extraordinary texture: falling-tender within, magnificently charred without.
Ingredients
Equipment: Large pot, Charcoal grill
- 1 kg beef ribs — bone-in
Zanzibar Marinade
- 5 garlic cloves
- 2 tbsp ginger
- 2 tbsp tamarind
- 1 tsp ground cloves
- 1 tsp cardamom
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp turmeric
- 2 tsp salt
- 2 tbsp oil
Method
- Blend marinade ingredients to a smooth paste. Coat ribs. Marinate 4 hours.
- Place marinated ribs in a pot. Cover with water. Simmer covered 70—80 minutes until very tender.
- Remove carefully.
- Grill over medium-high charcoal 8—10 minutes per side until magnificently charred and caramelised.
- Rest 5 minutes. Serve.

- The simmer must produce completely tender ribs before grilling.
- The marinade caramelises beautifully in the final grill.

- Insufficient simmering — tough ribs.
