🍞 Zanzibar Cardamom Bread

Zanzibar Cardamom Bread — a soft, sweet enriched loaf perfumed heavily with Zanzibar cardamom, topped with sesame seeds and a honey glaze. The island's most fragrant morning bread — the smell of cardamom from the oven is one of Zanzibar's great morning experiences.
Zanzibar cardamom bread is the most aromatic bread on the island — the generous amount of locally grown cardamom produces a loaf whose fragrance fills the whole building. Made for Eid and for the most honoured occasions, it is the bread that signals something special is happening.
Ingredients
Equipment: Loaf tin or round tin, Oven at 175°C
- 3 cups all-purpose flour
- 2 tsp yeast
- 3 tbsp sugar
- 1.5 tsp ground cardamom
- ½ tsp salt
- ¼ tsp ground nutmeg
- 200ml warm coconut milk
- ½ cup warm water
- 2 eggs
- 3 tbsp butter — softened
Topping: 1 egg beaten + sesame seeds + 2 tbsp honey mixed with 1 tbsp water
Method

- Use 1.5 tsp cardamom (double) and add nutmeg.
- Shape into loaf tin.
- Rest 30—40 minutes.
- Brush with egg wash. Scatter sesame seeds generously.
- Bake 30—35 minutes until golden.
- Brush with honey glaze while still hot from the oven.
Chef Tips
- Double the cardamom of a normal bread — this is Zanzibar.
- The honey glaze while hot creates a shiny, fragrant crust.
Common Mistakes to Avoid
- Insufficient cardamom.
- Cold honey glaze — does not adhere.
