Tanzanian Viazi Karai — boiled potatoes coated in a thick, heavily spiced chickpea flour batter and deep-fried until magnificently crispy. Served with coconut chutney and tamarind sauce. One of Zanzibar's most beloved street snacks — the Indian Ocean influence on the Tanzanian potato.
Viazi Karai (curry potatoes) is the Zanzibar street food that reflects the island's Indian Ocean trading heritage most directly — the bhaji technique applied to the boiled potato, producing a crispy, spice-crusted fritter that is simultaneously hearty and fragrant. Sold at every Zanzibar market.
Ingredients
Equipment: Large pot for boiling, Deep frying pan
- 6 medium potatoes — boiled whole and cooled, halved
Spiced Chickpea Batter
- 1 cup chickpea flour (besan)
- ¼ cup water
- 1 tsp curry powder
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp chilli powder
- 1 tsp salt
- 2 tbsp fresh coriander — chopped
- Oil for deep frying
Serve with: Chatni ya Nazi (TZA118) and tamarind sauce
Method
- Boil whole potatoes in salted water until just tender — not falling apart. Cool completely. Halve.
- Make batter: whisk chickpea flour with water and all spices to a thick, smooth batter.
- Add fresh coriander to batter.
- Heat oil to 175°C.
- Dip each potato half in batter — coat thickly.
- Fry in batches 4—5 minutes until deeply golden and crispy.
- Drain on paper towels.
- Serve immediately with coconut chutney and tamarind sauce.
Chef Tips
- The batter must be thick — thicker than bhajia batter (TZA133). It should coat the potato heavily.
- Completely cool potatoes before battering — warm potatoes slide off the batter.
- The crust should be genuinely thick and crunchy.

- Thin batter — falls off.
- Warm potatoes — batter does not adhere.
