Tanzanian egg rolls are not the Chinese egg roll — they are chapati rolls filled with egg and spiced meat, pan-fried to seal. They are the ultimate portable street food: everything you need in one hand-held roll.
Ingredients
Equipment: Wide flat pan
- 4 chapatis
- 4 eggs — beaten and seasoned
- 200g minced beef — cooked and spiced
- 1 onion — thinly sliced
- 1 tomato — finely diced
- 1 green chilli — sliced
- 2 tbsp coriander
- ½ tsp curry powder
- Salt and pepper
- 2 tbsp oil for frying
Method
- Season and cook minced beef with curry powder, salt, onion. Cool slightly.
- Heat pan over medium heat. Brush with oil.
- Place a chapati in the pan.
- Pour 1 beaten egg over the chapati — spread with the back of a spoon.
- Allow egg to set 1 minute.
- Spoon 2 tbsp spiced beef, tomato, chilli, and coriander across the centre.
- Roll the chapati up tightly.
- Pan-fry on all sides until golden and sealed — 2—3 minutes.
- Cut diagonally. Serve with pili pili.
Chef Tips
- Work quickly — the egg sets fast.
- Do not overfill — rolling becomes impossible.
- Press the seam of the roll down in the pan first — it seals in 30 seconds.
Common Mistakes to Avoid
- Overfilling.
- Moving too slowly — egg fully sets before rolling.
The Science
The egg layer between the chapati and filling serves as a binding agent — the proteins set around the filling, gluing the chapati to the contents during the final pan-fry. This is why the roll stays together without any additional adhesive.
