Tanzanian Street Sugarcane — freshly peeled sugarcane sticks sold at every Tanzanian market for chewing and sucking the sweet juice directly from the fibrous stalk. The most natural, most refreshing, and most ancient Tanzanian street snack.
Peeled sugarcane sticks are the original Tanzanian street snack — chewed for the sweet juice and spat out the fibrous residue. Vendors with machetes peel and portion the cane on the spot, selling it in handfuls. It is the most ancient, most sustainable, and most refreshing street snack in the country.
Ingredients
Equipment: Machete or sharp heavy knife for peeling
- 1 section fresh sugarcane (about 30cm per person)
- Cold water or lime juice to sprinkle — optional
Method
- Peel the tough green outer layer from the sugarcane with a machete or heavy knife.
- Cut into 20—25cm pieces.
- Cut each piece lengthways into quarters — easier to hold and chew.
- Chew the white fibrous stalk, extracting the sweet juice.
- Spit out the chewed fibre — it is not edible.
Chef Tips
- Always buy from a vendor who peels in front of you — pre-peeled cane dries quickly.
- Chew one end until soft, then squeeze and suck.
- Cold sugarcane is the most refreshing.

The Science
Sugarcane contains 12—17% sucrose by weight. Chewing ruptures the fibrous cell walls, releasing the juice. The fibre (bagasse) is cellulose and cannot be digested — it is appropriately spat out. The sucrose in sugarcane juice is hydrolysed by salivary amylase to glucose and fructose during chewing.
