Roasted corn is the snack that connects all of Tanzania — from the lakeside villages to Dar es Salaam's busiest intersections, from Zanzibar's beaches to Kilimanjaro's foothills, the charcoal corn vendor is always there. The lemon and chilli salt rubbed on at the end is what makes it Tanzanian — simple, perfect, irreplaceable.

Ingredients

Equipment: Charcoal grill or jiko

  • 4 whole corn cobs — husks on or removed
  • Coarse salt
  • Chilli powder
  • 2 lemon halves for rubbing

Method

  1. If husks on: soak in water 10 minutes. Place directly over coals.
  2. If husks removed: place directly over medium coals.
  3. Roast 15—20 minutes, turning every 3—4 minutes.
  4. The kernels should be lightly charred in places and the cob tender.
  5. Rub immediately with cut lemon half.
  6. Sprinkle chilli and salt. Rub in with the lemon.
  7. Eat immediately.

Chef Tips

  • Medium coals — not too hot or the outside chars before the inside cooks.
  • The lemon must be rubbed on while piping hot — it penetrates better.
  • Charred spots are flavour — do not fear them.

  • Too high heat — burns exterior, raw interior.
  • Cold corn before seasoning — lemon does not penetrate.

Roasting corn in the husk creates a steam environment — moisture trapped by the husk cooks the corn from within while the outside chars slowly.
