🍌 Tanzanian Grilled Plantain

Tanzanian Ndizi Choma — whole ripe plantains roasted directly over charcoal in their skins until blackened outside and melting, caramelised within. The sweet street snack of Tanzania's plantain-growing regions — eat them straight from the skin.
Grilled plantains in the skin are one of Tanzania's most satisfying street snacks — the skin chars completely over charcoal while the plantain inside caramelises in its own steam. Eaten straight from the skin, they are sweet, smoky, and deeply satisfying.
Ingredients
Equipment: Charcoal grill or jiko
- 4 ripe plantains — unpeeled
- Salt and chilli — optional
Method
- Place whole unpeeled ripe plantains directly on charcoal coals or grill rack.
- Roast 6—8 minutes until the skin is completely blackened on the bottom.
- Turn. Roast other side 5—6 minutes until completely blackened all over.
- The plantain is done when it feels soft throughout when gently pressed.
- Allow to cool slightly. Slit the skin. Eat the caramelised flesh directly.
Chef Tips
- Ripe plantains (yellow with black spots) are essential — green plantains remain starchy and unsweet.
- Do not be afraid of the black skin — the inside will be magnificently caramelised.
Common Mistakes to Avoid
- Under-ripe plantains.
- Removing too early — centre still starchy.
The Science
The blackened skin creates a steam chamber — the plantain cooks in its own moisture while the charcoal conducts heat through the skin. The Maillard reaction and caramelisation of the natural sugars in the ripe plantain produce the characteristic sweet-smoky interior flavour.
