Boiled groundnuts are the harvest season alternative to roasted — when fresh green peanuts are available immediately after the harvest, they are boiled in heavily salted water. The result is completely different from roasted peanuts: soft, moist, creamy, and mild. A seasonal treat that roasted peanuts cannot replicate.

Ingredients

Equipment: Large pot

  • 500g fresh raw groundnuts in shells
  • 3 tbsp coarse salt
  • Enough water to cover by 5cm

Method

  1. Wash groundnuts thoroughly.
  2. Place in a large pot. Cover with water by 5cm.
  3. Add salt generously — the water should taste very salty.
  4. Bring to a boil. Simmer covered for 40—50 minutes.
  5. Test one — the nut inside should be completely soft and creamy.
  6. Drain. Allow to cool slightly.
  7. Eat by cracking the shell and extracting the soft nut.

  • The water must be genuinely salty — this seasons the nut through the shell.
  • Fresh green peanuts only — dried peanuts do not boil the same way.
