Roasted sweet potato is one of Tanzania's most nutritious street snacks — the natural sweetness of the Tanzanian sweet potato caramelises beautifully over charcoal, and the high beta-carotene content makes it one of the most vitamin-rich street foods available.

Ingredients

Equipment: Charcoal grill or jiko

  • 4 medium sweet potatoes — unpeeled, washed
  • Salt and chilli — optional

Method

  1. Place whole sweet potatoes directly on charcoal coals or grill rack.
  2. Roast 30—35 minutes, turning every 8—10 minutes.
  3. The skin will blacken and char; the interior should feel soft when pressed.
  4. Test with a skewer — no resistance means done.
  5. Allow to cool slightly. Slit and eat from the skin.

Chef Tips

  • Medium coals — patience produces a more evenly cooked interior.
  • The skin should be completely blackened — the inside will be perfect.

Common Mistakes to Avoid

  • Too high heat — exterior burns before inside cooks.

The Science

Sweet potato contains beta-carotene in fat-soluble form — the natural oils in the sweet potato mobilise during roasting, making the beta-carotene more bioavailable than in raw sweet potato. The charring creates pyrazines and caramelisation products that add the characteristic roasted-sweet flavour.
