Ingredients

  • 1 kg chicken pieces — bone-in

Marinade

  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tsp salt

Coating

  • 1 cup all-purpose flour
  • 1 tsp curry powder

  • Oil for deep frying

Method

  1. Marinate chicken pieces in all marinade ingredients for 1 hour minimum.
  2. Mix coating flour with spices.
  3. Dredge marinated chicken pieces in seasoned flour — coat thoroughly.
  4. Heat oil to 170°C — enough to submerge the pieces.
  5. Fry in batches — do not crowd.
  6. Fry 12—15 minutes depending on piece size, turning once.
  7. Internal temperature must reach 74°C.
  8. Drain on paper towels. Serve immediately.
