Ndizi ya Kuchoma
Tanzanian Ndizi ya Kuchoma — small Tanzanian finger bananas grilled directly over charcoal until the skin blackens and the flesh inside caramelises. The simplest highland street snack — sweet, smoky, and completely natural.
Grilled finger bananas are the snack of Tanzania's highland regions where bananas grow abundantly. Smaller and sweeter than plantains, they need only minutes over charcoal to become magnificently caramelised.
Ingredients
Equipment: Charcoal grill or jiko
- 8 small ripe finger bananas or standard bananas
Method
- Place whole unpeeled ripe bananas directly on charcoal.
- Grill 5—6 minutes until the skin is completely blackened.
- Turn. Grill 4—5 minutes more.
- Skin should be fully blackened; the banana inside soft and caramelised.
- Slit and eat directly from the skin.
Chef Tips
- Ripe yellow bananas only — green ones remain starchy.
- The blacker the skin, the better the caramelisation inside.
