Tanzanian Njugu Mchanganyiko — a mix of groundnuts, cashews, and sunflower seeds dry-roasted with Tanzanian spices including curry powder, cumin, and chilli. The upmarket street snack sold at urban markets and bus stations across Tanzania.
Spiced mixed nuts are the urban Tanzanian upgrade from plain roasted groundnuts — the addition of cashews and the spice coating makes them more complex and more satisfying. Sold in small packets at petrol stations, offices, and upmarket markets.
Ingredients
Equipment: Wide dry pan
- 1 cup raw groundnuts
- ½ cup raw cashews
- ½ cup sunflower seeds
- 1 tsp curry powder
- ½ tsp cumin
- ½ tsp chilli powder
- ½ tsp turmeric
- 1 tsp salt
- 1 tbsp oil
Method
- Heat pan over medium heat.
- Add all nuts and seeds. Stir constantly for 8—10 minutes until lightly golden.
- Add oil. Toss to coat.
- Add all spices immediately. Stir vigorously to coat every nut.
- Cook 2—3 more minutes until spices are fragrant and coating is set.
- Spread on a tray. Cool completely before eating.

The Science
