Banana fritters are the sweet street food of Tanzanian evenings — the ripe bananas coated in a simple batter and fried until the outside is golden and crispy while the banana inside caramelises in its own sweetness. Simple, affordable, and completely satisfying.
Ingredients
Equipment: Deep frying pan
- 4 ripe bananas — halved lengthways
Batter
- 1 cup all-purpose flour
- 1 tbsp sugar
- ½ tsp ground cardamom
- Pinch of salt
- 200ml water
- Oil for deep frying
- Honey or powdered sugar to serve
Method
- Make batter: whisk flour, sugar, cardamom, salt and water until smooth.
- Halve bananas lengthways.
- Heat oil to 175°C.
- Dip banana halves in batter — coat completely.
- Fry 3—4 minutes until golden on all sides.
- Drain on paper towels.
- Drizzle with honey or dust with powdered sugar.
- Serve warm.

- The batter should be smooth but not too thick.
