Sweet potato balls are the coastal street snack that uses Tanzania's most nutritious staple — the mashed sweet potato produces a naturally sweet, naturally orange ball that fries beautifully and is as nutritious as it is delicious.
Ingredients
Equipment: Deep frying pan
- 400g sweet potatoes — boiled and mashed
- 3 tbsp coconut milk
- 2 tbsp flour
- 2 tbsp sugar
- ½ tsp ground cardamom
- Pinch of salt
- Oil for deep frying
Method
- Mash sweet potatoes completely smooth.
- Mix in coconut milk, flour, sugar, cardamom, and salt.
- The mixture should be firm enough to roll into balls.
- Roll into walnut-sized balls.
- Chill 15 minutes.
- Heat oil to 175°C.
- Fry in batches 3—4 minutes until golden.
- Drain. Serve warm.

- Completely smooth mash — lumps create weak points that split during frying.
- Chilling before frying firms the balls.
