Ingredients
Equipment: Deep frying pan, Small bowl for drizzle
- 4 ripe bananas — halved lengthways
Coconut-Cardamom Batter
- ¾ cup all-purpose flour
- ¼ cup rice flour
- 1 tbsp sugar
- ½ tsp ground cardamom
- 150ml coconut milk
- Pinch of salt
- Oil for deep frying
Tamarind-Honey Drizzle
- 2 tbsp tamarind paste
- 2 tbsp honey
- 1 tbsp warm water
To serve: coconut ice cream (TZA164) or vanilla ice cream
Method
- Make batter: whisk both flours, sugar, cardamom, and salt. Add coconut milk gradually until smooth.
- Make drizzle: whisk tamarind, honey, and warm water until smooth. Set aside.
- Heat oil to 175°C.
- Dip banana halves in batter. Coat completely.
- Fry 3—4 minutes until golden and crispy.
- Drain on paper towels.
- Plate two banana halves per serving.
- Drizzle with tamarind-honey sauce.
- Add a scoop of coconut ice cream alongside.
- Serve immediately.
