Coconut flan is Tanzania's most elegant modern dessert — the French crème caramel technique applied to the island's coconut milk, with cardamom as the Zanzibar signature. When unmoulded, the dark caramel floods over the pale custard in one of the most visually beautiful dessert moments.

Ingredients

Equipment: 6 ramekins or 1 large flan mould, Baking dish for water bath, Oven at 160°C

    Caramel

    • ¾ cup sugar
    • 3 tbsp water

    Coconut Custard

    • 400ml thick coconut milk
    • 200ml coconut cream
    • 4 large eggs
    • 2 egg yolks
    • 4 tbsp sugar
    • ½ tsp ground cardamom
    • 1 tsp vanilla extract
    • Pinch of salt

    Method

    1. Make caramel: cook sugar and water over medium heat without stirring until deep amber (175°C). Pour immediately into ramekins, swirling to coat.
    2. Make custard: whisk eggs, yolks, sugar, cardamom, vanilla, and salt. Add coconut milk and cream. Whisk until combined.
    3. Strain through a fine sieve into ramekins.
    4. Place ramekins in a deep baking dish. Pour hot water around them to halfway up the sides.
    5. Bake at 160°C for 45—55 minutes until set but still slightly wobbly in the centre.
    6. Cool completely. Refrigerate minimum 4 hours.
    7. To unmould: run a knife around the edge. Place a plate over and flip quickly.

    Chef Tips

    • The water bath (bain-marie) is essential — it regulates the temperature and prevents the custard from curdling.
    • A slightly wobbly centre when removed from the oven is correct — it will set fully as it cools.
    • Refrigerate overnight for the cleanest unmoulding.

    The Science

    Egg custard sets through protein coagulation — egg proteins denature and form a gel network at 70—80°C. The water bath ensures the temperature never exceeds 85°C (the temperature of boiling water minus evaporative cooling) — preventing over-coagulation which produces a rubbery, curdled result. Coconut cream's fat creates a smoother, more tender gel than a dairy custard.
