Tanzanian Mango Sorbet — Zanzibar Dodo mango purée frozen with lime juice and a light cardamom syrup. Pure mango, pure Zanzibar — the most refreshing dessert the island produces. No dairy, no fat, just the extraordinary flavour of peak-season mango.
Mango sorbet from Zanzibar's own Dodo mango is one of the finest frozen desserts in the world — the mango's extraordinary fragrance and natural sweetness need minimal intervention. Just lime for brightness, cardamom for the Zanzibar signature, and a simple syrup to produce the right texture.
Ingredients
Equipment: Blender, Loaf tin or freezer-safe container
- 4 large ripe Zanzibar mangoes — peeled and diced (about 600g flesh)
Cardamom Syrup
- ½ cup sugar
- ½ cup water
- ¼ tsp ground cardamom
- 2 tbsp fresh lime juice
- Pinch of salt
Method
- Make syrup: dissolve sugar in water with cardamom. Simmer 2 minutes. Cool completely.
- Blend mango flesh until completely smooth.
- Combine mango purée, cooled syrup, lime juice, and salt.
- Taste — adjust lime and sweetness.
- Pour into a shallow freezer container.
- Freeze 4 hours, whisking vigorously every hour (or churn in an ice cream machine for 20 minutes).
- Serve in chilled glasses or scooped into bowls.

- Serve at -12°C — slightly softer than ice cream.

The Science
Sorbet texture depends on small ice crystal size. The sugar syrup lowers the freezing point — allowing the sorbet to be scoopable at -12 to -15°C rather than rock-hard. Whisking during freezing mechanically breaks up forming ice crystals, maintaining a smooth texture. The natural acids in mango and lime also slightly inhibit large crystal formation.
