🍪 Tanzanian Coconut Macaroons

Tanzanian Coconut Macaroons — golden mounds of desiccated coconut held together with egg white and sugar, flavoured with cardamom and vanilla, baked until the exterior is lightly crispy and the interior remains moist and chewy. Naturally gluten-free. Zanzibar's most indulgent coconut biscuit.
Coconut macaroons are one of Zanzibar's most popular celebration biscuits — made with the island's abundant desiccated coconut, they are gluten-free, simple to make, and extraordinarily coconutty. The cardamom is the Zanzibar signature that distinguishes these from any other coconut macaroon.
Ingredients
Equipment: Baking sheet with parchment, Oven at 160°C
- 2 cups desiccated coconut (unsweetened)
- 2 egg whites
- ½ cup sugar
- ½ tsp ground cardamom
- ½ tsp vanilla
- Pinch of salt
Method
- Preheat oven to 160°C. Line a baking sheet with parchment.
- Whisk egg whites to soft peaks.
- Fold in sugar, coconut, cardamom, vanilla, and salt.
- Mix gently until combined.
- Scoop heaped tablespoons onto the baking sheet, pressing into mounds.
- Bake 18—20 minutes until the exterior is lightly golden.
- Cool completely on the tray — they firm as they cool.

The Science
Egg white foam provides the structural network — the denatured proteins set during baking, trapping the coconut pieces and sugar in a rigid foam structure. The sugar caramelises on the outer surface during baking, creating the characteristic lightly crispy shell over the moist interior.
