Chai ya Tangawizi
Tanzanian Chai ya Tangawizi — strong black tea brewed with generous amounts of fresh ginger, sweetened, and finished with milk. Tanzania's most universal beverage — the morning ritual, the afternoon comfort, the universal welcome. Nothing says hospitality in Tanzania more than a cup of tangawizi chai.
Ginger tea is the heartbeat of Tanzanian daily life — brewed from early morning to late evening at every home, every mama lishe, every roadside stall, and every office. The Tanzanian version uses far more fresh ginger than any other East African chai — the ginger bite is the point. Strong, sweet, milky, and warming.
Ingredients
Equipment: Medium saucepan
- 4 cups water
- 3 tbsp loose black tea leaves (or 4 tea bags)
- 1 cup milk
- 3 tbsp sugar
- 6cm fresh ginger — roughly crushed with the flat of a knife
Method
- Combine water and crushed ginger in a saucepan.
- Bring to a boil. Simmer 4—5 minutes to extract the ginger fully.
- Add tea leaves. Simmer 2 minutes.
- Add milk and sugar.
- Bring back to just before the boil — watch carefully, it boils over fast.
- Strain into cups immediately.
Chef Tips
- Crush the ginger — do not slice. Crushing releases far more volatile oils than slicing.
- The ginger should be tasted clearly in the finished tea — add more if needed.
- Never fully boil after adding milk — the milk scorches.
Common Mistakes to Avoid
- Slicing ginger instead of crushing — weaker flavour.
- Boiling after adding milk.
- Insufficient ginger — this tea should have real bite.
The Science
Fresh ginger contains gingerols and shogaols — pungent phenolic compounds that are far more concentrated near the skin and in the fibrous core. Crushing ruptures the cell walls and maximises the extraction of these compounds into the boiling water. Boiling converts some gingerols to shogaols — which are actually spicier and more persistent.
