Swahili chai is ginger tea elevated by the full coastal spice palette — the same cloves, cardamom, and cinnamon that go into the pilau and the biriani here perfume the morning tea. It is the tea served at every Zanzibar breakfast, in every Stone Town café, and at every coastal gathering. Richer, more aromatic, and more complex than plain ginger tea.

Ingredients

Equipment: Medium saucepan

  • 4 cups water
  • 3 tbsp loose black tea
  • 1 cup milk
  • 3 tbsp sugar
  • 5cm fresh ginger — crushed
  • 4 cardamom pods — bruised
  • 3 whole cloves
  • 1 small cinnamon stick
  • 4 black peppercorns

Method

  1. Combine water, ginger, cardamom, cloves, cinnamon, and peppercorns.
  2. Bring to a boil. Simmer 5—6 minutes until deeply spiced.
  3. Add tea leaves. Simmer 2 minutes.
  4. Add milk and sugar.
  5. Bring to just before the boil.
  6. Strain into cups. Serve hot.

Chef Tips

  • Bruise cardamom pods — press flat with the side of a knife. Releases more flavour than whole.
  • The longer the spices simmer before adding tea, the more aromatic the chai.
  • Adjust spice ratios — every coastal family has their own balance.

Common Mistakes to Avoid

  • Whole unbruised cardamom — half the flavour.
  • Adding spices and tea simultaneously — spices need more time.

Each spice contributes distinct volatile aromatic compounds to the chai: cardamom (1,8-cineole), cloves (eugenol), cinnamon (cinnamaldehyde), ginger (gingerols), pepper (piperine).
