Tanzanian Lemon Barley Water — pearl barley simmered in water, strained, then combined with fresh lemon juice and honey. The traditional Tanzanian recovery drink given to the sick, the hospitalised, and the recovering — soothing, nourishing, and deeply gentle.
Barley water is Tanzania's healing drink — given to the sick in hospitals across the country, prepared by mothers for recovering children, and regarded as the most restorative non-medicinal beverage available. Ingredients
Equipment: Saucepan, Fine sieve
- ½ cup pearl barley
- 6 cups water
- Zest of 1 lemon
- 3 tbsp fresh lemon juice
- 2—3 tbsp honey
- Pinch of salt
Method
- Rinse barley thoroughly.
- Combine barley, water, and lemon zest in a saucepan.
- Bring to a boil. Simmer 20—25 minutes.
- Strain through a fine sieve. Discard barley (or eat it).
- Add lemon juice, honey, and salt to the warm barley water.
- Stir until honey dissolves.
- Serve warm or chilled.
Chef Tips
- The barley water should be cloudy — this is the dissolved beta-glucan, the most nutritious component.
- Add honey off the heat — excessive heat destroys honey's beneficial compounds.

- Straining too thoroughly — removes beneficial beta-glucan.
- Adding honey to boiling liquid.
