Lemongrass tea is the herbal alternative to chai on the Tanzanian coast — the same fragrance that goes into the fish soups and coconut curries, here brewed on its own into a delicate, pale golden tea of genuine therapeutic value. Grown throughout coastal Tanzania, lemongrass tea is the afternoon drink of choice for those who want fragrance without caffeine.
Ingredients
Equipment: Saucepan, Sieve
- 4 stalks fresh lemongrass — bottom 15cm trimmed, bruised
- 4 cups water
- 2 tbsp honey
Optional: 2cm fresh ginger for extra warmth
Method
- Bruise lemongrass stalks by bending and crushing them with your hands or a rolling pin.
- Combine water, lemongrass (and ginger if using) in a saucepan.
- Bring to a boil. Reduce heat. Simmer 6—7 minutes.
- The water should be pale golden and fragrant.
- Strain into cups.
- Add honey. Stir.
- Serve hot or pour over ice for iced lemongrass tea.
Chef Tips
- Bruising is the key step — it ruptures the cells and releases the volatile oils.
- Do not boil vigorously — simmering preserves the delicate citral aroma.
- Excellent served iced with lime — the Zanzibar beach version.

- Not bruising the lemongrass — weak flavour.
- Hard boiling — loses delicate citral aromatics.
The Science
Lemongrass contains citral (geranial + neral) — the primary aromatic compound that gives it its distinctive lemon-lime fragrance. Citral is a volatile compound that evaporates rapidly at high temperatures. Gentle simmering rather than boiling maximises extraction while minimising evaporative loss of the aromatics.
