Ingredients
Equipment: Blender
- 3 very ripe bananas
- 2 cups cold milk
- 1 tbsp honey
- ¼ tsp ground cardamom
- ½ tsp vanilla
- 1 cup ice
Method
- Add all ingredients to a blender.
- Blend 45—60 seconds until smooth and frothy.
- Taste — adjust honey.
- Serve immediately.
Chef Tips
- Very ripe bananas (with black spots) produce a much sweeter, more flavourful shake.
- Frozen bananas make the shake thicker and colder.

- Under-ripe bananas — starchy and flat.
The Science
Very ripe bananas have converted their starch to sugars via amylase activity — they are naturally sweeter, smoother when blended, and release more of the aromatic esters responsible for banana flavour than less ripe bananas.
