🍹 Tanzanian Ginger Lemonade

Tanzanian Ginger Lemonade — a ginger syrup dissolved in cold water with fresh lemon juice, served over ice. Hot-cold and sweet-tart simultaneously — the most invigorating homemade cold drink in Tanzania. Better than any commercial lemonade.
Ginger lemonade is the home-made cold drink that Tanzanian families make for guests and celebrations — the sharp ginger heat against the tart lemon creates an energising combination unlike any commercial drink. The ginger syrup base can be made ahead and stored for a week.
Ingredients
Equipment: Small saucepan, Sieve
Ginger Syrup (makes enough for 6 glasses)
- 1 cup sugar
- 1 cup water
- 6cm fresh ginger — roughly chopped
Per glass
- 3 tbsp ginger syrup
- 3 tbsp fresh lemon juice
- 1 cup cold water or soda water
- Ice
Method
- Make ginger syrup: combine sugar, water, and ginger. Bring to a boil. Simmer 5 minutes. Cool. Strain.
- For each glass: combine ginger syrup, lemon juice, and cold/soda water in a glass.
- Add ice. Stir.
- Taste — adjust syrup and lemon balance.
- Garnish with a lemon slice and ginger slice.

- Soda water makes it more refreshing and celebratory.
- The ginger syrup is the make-ahead component — lasts 2 weeks refrigerated.
- More ginger than lemon is the Tanzanian preference — spicy and refreshing.

- Insufficient ginger in the syrup.
- Using bottled lemon juice — fresh only.
The Science
The ginger syrup extracts gingerols and shogaols into the sugar solution — the sugar acts as a preservative and concentrates the ginger compounds. When diluted in the glass, these compounds provide both the characteristic ginger heat and its anti-inflammatory effects.
