🍠 Pare Fermented Cassava

Pare Fermented Cassava — cassava soaked and fermented for 3—4 days until the starch softens and the natural compounds are neutralised, then boiled or pounded into a soft, slightly sour staple. The traditional cassava preparation of the Pare Mountains — safer, more digestible, and more flavourful than unfermented cassava.
The Pare fermentation of cassava is one of Tanzania's most important traditional food safety practices — soaking cassava for 3—4 days in water neutralises the naturally occurring linamarin (which produces hydrogen cyanide), making it completely safe while simultaneously improving its nutritional profile through LAB activity.
Ingredients
Equipment: Large container for soaking, Large pot for boiling
- 1 kg fresh cassava — peeled and soaked in large quantity of water for 3—4 days
- Fresh water for boiling
- 1 tsp salt
Method
- Peel cassava. Submerge completely in a large container of water.
- Soak 3—4 days at room temperature, changing water daily.
- The water will become slightly cloudy and sour-smelling — this is correct.
- After 3—4 days, remove cassava. It will be soft.
- Boil in fresh salted water for 20 minutes until completely tender.
- Eat as a soft staple alongside stews, or pound into a thick paste.
Chef Tips
- Change the soaking water daily — this removes the released compounds progressively.
- The slight sourness of fermented cassava is a feature, not a flaw.
- After fermentation, cassava is much more tender and cooks faster.

The Science
Soaking cassava in water triggers linamarase enzyme activity — breaking down linamarin into glucose and HCN (hydrogen cyanide). The HCN, being a gas, dissolves into the soaking water and is removed when the water is changed. Simultaneously, lactic acid bacteria in the water begin fermenting the cassava starch, lowering pH and improving digestibility. 3—4 days of soaking with daily water changes reduces linamarin by over 95%.
