- 400g large prawns — peeled
Zanzibar Coconut Prawn Curry
- 300ml coconut milk
- 2 shallots — diced
- 3 garlic cloves — sliced
- 1 tbsp fresh ginger
- 2 tomatoes — diced
- 2 tbsp coconut oil
- 1 tsp curry powder
- ½ tsp turmeric
- ½ tsp ground cardamom
- 1 tsp salt
- 2 tbsp tamarind paste
Bowl Base: 2 cups cooked coconut jasmine rice
Pickled Cucumber: ½ cucumber, 3 tbsp rice vinegar, 1 tsp sugar, pinch salt
Crispy Shallots: 2 shallots, thinly sliced, deep fried until golden
Garnish: coriander, sesame seeds, lime, sliced chilli
Method
- Make pickled cucumber: toss cucumber with vinegar, sugar, and salt. Rest 20 minutes.
- Make crispy shallots: deep fry thinly sliced shallots at 160°C until golden. Drain. They crisp as they cool.
- Cook coconut jasmine rice with coconut milk and water.
- Make prawn curry: sauté shallots and garlic. Add spices, tomatoes, tamarind. Cook 6 minutes. Add coconut milk. Simmer 5 minutes. Add prawns. Cook 4 minutes.
- Bowl assembly: rice in base → curry beside → pickled cucumber → crispy shallots scattered over → coriander → sesame seeds → lime wedge → sliced chilli.
