Ingredients
Equipment: 20cm springform tin, Electric mixer
Coconut Biscuit Base
- 200g digestive biscuits or coconut biscuits — crushed
- 50g desiccated coconut
- 80g melted butter
Baobab Cheesecake Filling
- 400g full-fat cream cheese
- 250ml double cream
- 100g icing sugar
- 1 tsp vanilla
- 3 tbsp baobab powder
- 1 tbsp lime juice
Topping: mango coulis, toasted coconut flakes
Method
- Mix crushed biscuits, desiccated coconut, and melted butter.
- Press firmly into base of springform tin. Refrigerate 20 minutes.
- Whip cream to soft peaks.
- Beat cream cheese with icing sugar and vanilla until smooth.
- Fold whipped cream into cream cheese mixture.
- Divide the mixture. Mix baobab powder and lime juice into half.
- Pour plain filling over base. Then spoon baobab filling on top.
- Swirl with a knife for a marbled effect.
- Refrigerate minimum 4 hours.
- Top with mango coulis and toasted coconut before serving.
Chef Tips
- Do not over-fold when marbling — 5—6 passes of a knife is enough.
- Baobab's natural tartness complements the sweetness of the cream cheese.
- The colour gradient from cream to rust-orange is the visual signature.
- Freeze for 1 hour before serving for cleaner slices.
