Tanzanian Spiced Latte — freshly brewed Kilimanjaro dark roast coffee with steamed milk, Zanzibar cardamom syrup, ginger, and a dusting of cinnamon. The café drink that bridges Tanzania's two greatest flavour traditions — the Kilimanjaro coffee and the Zanzibar spice — in one extraordinary cup.
The Tanzanian spiced latte is the signature drink of Tanzania's specialty coffee café scene — freshly brewed single-origin Kilimanjaro coffee combined with the Zanzibar spice tradition into a latte of completely distinctive character. The cardamom syrup is the bridge between the coffee's fruit-forward acidity and the warm spice complexity.
Ingredients
Equipment: Coffee maker or moka pot, Milk frother or small saucepan, Small saucepan for syrup
Zanzibar Cardamom Syrup
- ½ cup sugar
- ½ cup water
- 6 cardamom pods — bruised
- 1cm fresh ginger
Per Latte
- 60ml strong Kilimanjaro coffee or espresso (TZA266 method)
- 180ml whole milk — steamed
- 2 tbsp cardamom syrup
- Ground cinnamon for dusting
Method
- Make cardamom syrup: combine sugar, water, bruised cardamom, and ginger. Boil 3 minutes. Cool. Strain.
- Brew Kilimanjaro coffee very strong — 2 shots or moka pot.
- Steam milk until frothy and hot (65°C). Or heat in a saucepan and whisk vigorously.
- Add cardamom syrup to the cup.
- Pour hot coffee over.
- Pour steamed milk over, holding back the foam.
- Spoon foam on top.
- Dust with cinnamon.

- Kilimanjaro single-origin coffee is essential — the fruit-forward acidity pairs perfectly with cardamom.
- The cardamom syrup can be made in large batches and refrigerated 2 weeks.
- Milk temperature matters — 65°C for maximum sweetness without scalding.

Common Mistakes to Avoid
- Using low-quality coffee — the coffee is the base.
- Over-heating milk — bitter and flat.
The Science
Kilimanjaro high-altitude coffee beans contain higher concentrations of chlorogenic acids and more complex aromatic compounds than low-altitude beans. Cardamom's 1,8-cineole and alpha-terpinyl acetate complement coffee's aromatic esters — the combination produces a more complex aromatic experience than either alone.
